fresh vegetable soup

IMG_6671I am just so excited about my new years resolution this year, I started yesterday by making an amazing soup. This recipe was so yummy!!! I tweeked it a little bit because I had noodles in the fridge I needed to use and didn't have any cauliflower, but you can really put anything in this and it's super easy to make. I wanted to make something with zucchini, so I looked up on Pinterest some good recipes and found this one. Then I came across a bunch of other healthy recipes and ideas, so I pinned them all and am so anxious to try them. The best part was that I didn't feel crummy after eating this like I do a lot of time when I eat soups that are fatty or heavy. Here is the recipe (I left out the cabbage, cauliflower and chard and added bowtie noodles to mine) :

2 cloves of garlic

1 medium onion diced uncooked

2 medium carrots diced uncooked

1 medium red pepper diced

1 rib of celery uncooked diced

2 small zucchini uncooked diced

2 cups broccoli uncooked diced

2 tsp. thyme

6 cups vegetable broth

2 Tbsp. parsley or chives chopped

1/2 tsp salt or to taste

1/4 tsp black pepper or to taste

2 Tbsp. lemon juice, optional
